How it works
The substitution table maps common missing ingredients to a tested replacement — usually a single ingredient with a ratio, occasionally a multi-ingredient blend that recreates the original's behavior. The tool reads your scale factor, applies it to each replacement's quantities, and shows the result in the units you'd actually measure.
Ratios are tuned for the most common case for each ingredient, not for every possible use. Buttermilk substitution assumes you're replacing acidic dairy in a baking context; an egg substitute assumes the recipe relies on binding and lift, not on a hard-cooked yolk.
Worked example
Out of buttermilk in a pancake recipe? 1 cup of buttermilk becomes 1 cup of milk plus 1 tablespoon of lemon juice or white vinegar — let it sit five minutes before adding. Out of baking powder at 1x? Use 1/4 teaspoon of baking soda for every teaspoon of baking powder, and add a touch of cream of tartar if you have it. The tool scales each replacement line to whatever multiplier you're cooking at.
Common mistakes
Don't try to swap in an ingredient the table doesn't cover — the tool will say "no swap on file" and you'll be tempted to improvise. Improvised swaps are how baking goes wrong quietly. Don't apply dairy-for-dairy swaps to no-bake or savory recipes where the chemistry is different.
Don't scale the substitution ratio itself. If the recipe says 1 cup buttermilk and you're tripling, use 3 cups milk + 3 tablespoons acid, not 3 cups buttermilk. The tool does this for you; doing it by hand is easy to fumble.
FAQ
Why does the tool only know a few dozen swaps? Because untested swaps cause more harm than good. The table is short on purpose — every entry is a ratio with a track record.
Can I substitute across categories (dairy for non-dairy, gluten for gluten-free)? Only the entries in the table. Cross-category swaps almost always need additional changes (binding agents, hydration, leavening) that a single ratio can't capture.
What if I'm out of multiple things? Run the tool once per missing ingredient, then add the replacement lines into your recipe manually. There's no automated multi-substitution mode because the chemistry interactions get non-trivial fast.
