How it works
The converter uses the standard linear formulas — Fahrenheit to Celsius is (F − 32) × 5/9, Celsius to Fahrenheit is (C × 9/5) + 32 — and a fixed mapping between Celsius ranges and UK gas marks (gas 1 ≈ 275°F, gas 9 ≈ 475°F, with non-integer marks for the common middle range). The tool rounds to whole gas marks because ovens don't bake at fractions of a mark.
For convection ovens, a useful rule of thumb is to drop the recipe temperature by 25°F (about 15°C). Convection fans move heat faster than still air, and a recipe written for a conventional oven will over-brown at the same nominal temperature.
Worked example
350°F is about 177°C, which falls in the gas mark 4 range. 325°F is about 163°C, gas mark 3. 400°F is about 204°C, gas mark 6. If you're moving a recipe from a US conventional oven to a European convection oven, take the conventional temperature, subtract 25°F, and convert that to Celsius.
Common mistakes
Don't assume your oven is accurately calibrated — most run 10–25°F off the dial. An oven thermometer is the cheapest single upgrade in any kitchen. Don't open the door to "check" during the first two-thirds of bake time; the temperature drop extends cook time by 5–10% per opening.
Don't treat gas marks as a perfect 1:1 with Fahrenheit. The Mark system is older and coarser; gas 4 isn't exactly 350°F everywhere, but it's the closest single integer that matches the recipe's intent.
FAQ
What if my recipe uses a fan-forced temperature? Most modern European recipes quote both conventional and fan-forced temperatures, with the fan-forced figure typically 20–25°C lower. The tool handles the conventional-to-other conversions; subtract for fan mode yourself.
Why does the tool list a "none" gas mark for low temperatures? Gas marks start at 1/4 (about 225°F / 110°C). Anything below that is "very low" and has no formal gas mark, which is what the tool reports.
Is the conversion exact? Mathematically yes, but practically your oven's actual temperature probably varies by 10°F from the dial. Trust the math, verify with a thermometer.
